PDF to text conversion seems to work reasonably well with PDF documents created from a program, but is ineffective on files created from scanned pages which are essentially graphic images. As I suspected, it doesn't recognize text within those images.

LOLOL are you serious tkp?!?!?
It's a Portable Document Format converter NOT an Optical Character Reader! Duh!
If you want to copy text from scanned images take a look at FreeOCR or SimpleOCR (further down the same listing page)
